Marco’s Porcini Risotto with Cranberry Pesto

Risotto is an easy, healthy weeknight meal that is always a hit with family and friends. It’s grounding for fall and satisfying for winter months. In this variation, I’m serving it with cranberry pesto and a splash of pumpkin puree – a delicious complement to the main dish that also adds a nice pop of color to the presentation!

If you happen to have leftovers, they can be made into patties and fried up for breakfast or frozen for later use.
