Pitta Cooling Summer Dal

Cooling & cleansing, this is a great summer meal after a long week (or weekend!). Mung dal stokes the digestive fire and helps to burn toxins. Burdock root is cooling and cleansing to the liver, blood and lymphatic system; its diuretic effects aid in the elimination of toxins.

Serves 3

Ingredients:

1 tablespoon coconut oil
½ teaspoon ginger, peeled, chopped
¼ teaspoon burdock root powder
¾ teaspoon cumin seeds
1 teaspoon coriander seeds, crushed
½ teaspoon fennel powder
¾ cup split, mung dal
1¾ cups water
⅓ cup cilantro, chopped
½ teaspoon Himalayan salt
Add fresh squeezed lime juice to taste

In a 1½-quart sauté pan, warm the oil over medium heat. Add the ginger, burdock, cumin, coriander and fennel. Sauté until fragrant (about 1 minute). Add the dal and water, then increase heat to medium-high; bring to a boil. Reduce heat to simmer and cover. Check after 20 minutes, stir and add a little more water if necessary. Cook until dal is soft (about 25 minutes). Remove from heat and stir in the cilantro, lime juice and salt.

About: Burdock root is diuretic and liver cleansing – drink lots of water after eating (wait about 30 minutes). Coconut oil, coriander, fennel and lime are cooling.
